Odette is named after a revered matriarch in chef Julien Royer’s life: his grandmother.
“She was a really important person to me and she actually showed me how much passion, joy, happiness and emotion you can bring to people through food,” he told CNBC.
Originally from central France, Royer rose to the top of the culinary world when Odette was awarded three Michelin stars in 2019 and was named the best restaurant in Asia.
Located inside Singapore’s sprawling National Gallery, this restaurant, decorated in a liberal style of pink terrazzo, gray velvet and nickel and marble, serves French Asian cuisine.
Royer said the restaurant is designed to provide a retreat from the hustle and bustle of the outside world.
“I want people to come in and feel comfortable in the environment we create. I want people to have a great time and hopefully forget about the worries of their daily lives.”
